A particular highlight is the Ellwangen 2026 State Garden Show, which you can easily reach on foot thanks to our central location. Our Rotochsen beers The water that is so important for the brewer is fresh and crystal clear from our own spring. Selected brewing malt and fine hops come from local cultivation. In the brewhouse with the classic copper hoods, as well as in the further brewing process, we pay attention to artisanal, traditional brewing methods, we particularly value a long and cold fermentation and maturation process. We also consistently avoid short-term heating or even pasteurization of the beers. To your health!
Tradition obliges Tradition has a long history for us: our family business, founded in 1542, was officially granted brewing rights in 1680. The historic building was gradually converted from the former court beer tavern into a brewery inn and hotel. As siblings, we are already in the 7th generation running the brewery and inn and are firmly rooted in the region.
Tuesday to Saturday: Kitchen closes at 9:00 PM. Sunday: Kitchen closes at 1:30 PM.
